Do you close the grill when cooking steak? If you’re grilling quick-cooking foods such as burgers, thin steaks, chops, fish, shrimp, or sliced vegetables directly over the flames, you can leave the grill open. But when you grill thicker steaks, bone-in chicken, or whole roasts you’ll want the lid down, especially when you’re cooking with indirect heat.8 Sept 2020
Do you grill steaks with the lid open or closed? Grilling with the lid on or off – Leave the lid open when you’re searing steaks and need to keep a close eye on it. Once you move it to indirect heat, you can close the lid and let the smoke do its thing. Quick-cooking foods can usually be cooked (fish, veggies, hot dogs) with the lid open the whole time.
What is the proper way to grill a steak? Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
How long do you cook steaks on each side? Rare: 1½ mins per side. Medium rare: 2 mins per side. Medium: About 2¼ mins per side. Well-done steak: Cook for about 4-5 mins each side, depending on thickness.
The time spent over direct heat will sear the steak and give it a great exterior, while the indirect heat will finish cooking the steak without burning it. A good rule of thumb is to never keep your steak, regardless of size, over high direct heat for more than 3 minutes or you will burn it.
A 1-inch sirloin generally takes about 4-5 minutes on each side for medium rare doneness or 5-6 minutes for a medium steak doneness.
Brush your cooking grates clean and adjust your grill for direct, high heat. The best temperature for steaks is 450°F to 500°F. 4. Put your steaks on the grill, close the lid, and set your timer for 2 to 3 minutes, depending on the thickness of your steak.
Get the Grill Smoking Hot
Obviously, you don’t want to burn your food or start a fire, but when you’re grilling a steak, it’s really important to use the highest heat you can generate. This is because high heat cooks faster and the less time your steak spends cooking, the more tender it will be.
For the perfect medium-rare ribeye steak, grill for 9-12 minutes for a 1-inch steak, and 12-15 minutes for a 1½ inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
The timing. As a rule of thumb (for a steak 22mm thick) – cook 2 minutes each side for rare, 3-4 mins each side for medium-rare and 4-6 mins each side for medium. For well done, cook for 2-4 minutes each side, then turn the heat down and cook for another 4-6 minutes.
For a 1-inch steak, grill over medium heat between 10 and 12 minutes per side. It should reach an internal temperature of 170 F (77 C) or higher.
Don’t flip the steak more than once.
Put it in a hot pan, leave it alone until it starts to caramelize, and flip it only once. “You don’t need to keep flipping it every two minutes because then you’re removing the steak from the hot surface.
Indirect heat means you’re cooking the food to the side of the heat source. For steak, you’re mainly dealing with direct heat. (Indirect heat is better for slow-cooking foods like ribs.)
Preheat the grill.
This allows the steak sear to occur and then finish the steak over indirect heat and avoid burning. Trim excess fat if needed and pat dry before seasoning. The dry steak makes the browning or sear much easier and is key to a perfect grilled steak.
Medium Rare and Medium are the most popular points of doneness when cooking a steak, and for very good reason. At these temperatures, the meat reaches its maximum flavor and juiciness, making it very delicious to eat. It is the temperature most chefs recommend.
To cook a 2-inch-thick steak, use direct heat. When grill is medium (you can hold your hand at grill level only 4 to 5 seconds), follow directions below; cook steak 20 to 25 minutes for rare, 27 to 30 for medium. To cook a 3-inch-thick steak, use indirect heat.
Grill, covered with grill lid, over medium heat (300° to 350°) 2 1/2 minutes. Using tongs, turn each steak at a 60-degree angle, and grill 2 1/2 more minutes. Flip steaks, and grill 2 1/2 minutes. Turn steaks at a 60-degree angle, and grill 2 1/2 more minutes (medium-rare) or to desired degree of doneness.
At 400°, cook for 2:30 minutes per side. Medium steak 135-145 °F internally, with some pink in the center. At 400°, cook for 4:30 minutes per side.
Because well cooked meat (slow cook meat) should fall apart without effort. When meat is cooked too quickly this process doesn’t have time to occur—resulting in a cooked, but tough product. By slow cooking, meat has enough time to become tender. The rendered fat and soluble gelatin also make for one JUICY cut of meat!
Marinate the steak
My steak marinade is perfect for making the steak full of flavor and juicy. Prepare the steak marinade and allow the steak to marinate for two hours or overnight. Take the steaks out of the fridge and let rest at least 20 minutes before grilling so they aren’t chilled.
Place your ribeye steaks directly above the coals and sear for two to three minutes per side. To ensure perfect grill marks, resist the urge to move the steak while cooking. Close the lid to prevent flare-ups.
Yes, you should poke holes in steak. That way, marinades permeate it better. When puncturing your steak with a fork, it ends up carrying some of the bacteria on the surface down in the meat. These bacteria would normally get killed when cooking.
The best gas grill temperature for a 1-inch steak is between 325°F to 350°F. This is also the best temperature for medium-rare to rare-cooked steaks.
In general, exercise toughens muscles. Additionally, overcooking meat, even meat that comes from the more tender muscles, can make it tough. That’s because heat causes the proteins in the meat to firm up. Overcooking also basically squeezes the moisture out of the meat, making it dry as well as tough.
The main reason why meat are dry because the juice & fat in the meat get lost during the cooking process and usually it’s related to the temperature & cooking time. It means our cooking technique should focus on how to persevere juice and fat.
